For the most part, I eat a salad every day. I personally think that the dressing can either make or break a salad. You have to be careful when you are ordering a salad at a restaurant or buying pre-made dressing because a lot of the time the dressing adds a lot of empty calories, therefore I prefer to make my own.
One of my all time favorite salad dressings is a lemon tahini salad dressing from yummy mummy kitchen. Tahini is a great base for dressings because it has a lot of flavor and blends well with other ingredients. This recipe is delicious on salads, vegetables, quinoa bowls, etc.
- 1/4 cup tahini (I used Trader Joe’s)
- 2 tablespoons fresh lemon juice
- 1 tablespoon apple cider vinegar
- 2 cloves garlic, minced
- 1 tablespoon pure maple syrup
- salt and pepper to taste
- 1/4 cup water to thin
- Pour all ingredients into a small bowl or jar. Whisk together until smooth. If the tahini flavor is too strong for your taste, add a bit more apple cider vinegar and syrup to taste. Store in refrigerator or use on salads immediately.
If I make my salad dressing the day I am going to use it and I’m running a little behind, I always go for the classic balsamic vinaigrette. It’s simple and still offers enough flavor to enjoy your salad. I have found an upgraded version that I love to make and it is still very quick and doesn’t have many ingredients. This maple balsamic vinaigrette from joy food sunshine. It calls for honey mustard or dijon mustard so I use dijon mustard which has a very strong flavor so I add it as needed.
Add ingredients into a glass container or jar (with a lid) in the order listed.
Shake jar vigorously until completely combined.
Serve on your favorite salad or store in the refrigerator to use later!
Another one of my favorite dressings that I’ve discovered is made with avocados. Which who doesn’t love avocados?! I am all about quick and easy dressings so this just that. The cilantro and lime add the perfect finishing touch to this creamy dressings. Unfortunately you can’t make a large batch at a time because you want the avocado to stay fresh, but it does hold in the fridge for a few days. This creamy vegan avocado dressing is from Jessica in the kitchen.
- half a large avocado
- 1/4 cup parsley or cilantro, stems removed
- 1/4 teaspoon sea salt
- juice of one lime
- 1/3 cup olive oil
- 2 cloves garlic
- 1/2 cup water
Blend everything together in a food processor. You can add more water if you want to thin out the dressing. Enjoy!
